Healthy Recipes for Busy Women
Lunch/Dinner
One Pan Sausage and Veggies

I love this meal. It’s super easy to cut up a ton of veggies or whatever you have on hand with some sausage (I’d suggest chicken or turkey sausage) and potatoes on a tray and bake or fry in a pan for a few minutes. Recipe from Chelsea’s Messy Apron.
Honey Garlic Shrimp
Adding some shrimp to your diet (wild-caught is best) is a great way to get some variety in your protein sources and possibly add some omega-3s to your diet. We love shrimp tacos at our house, and these honey garlic shrimp recipe from Sally’s Baking Addiction looks divine as well!
Chicken Tortilla Soup

During the colder months, there’s nothing better than some hearty soup. Try this easy chicken tortilla soup recipe that only takes 30 minutes to whip up! Recipe: From Valerie’s Kitchen
Balsalmic Chicken and Veggies

I love using my slow cooker because you can literally throw anything in, leave, and come back to a delicious meal. This balsamic chicken and veggies recipe from Tasty is one of our go-to’s for busy nights!
Avocado Caprese Salad
Looking to add lots of greens to your meal? Salads are hard to beat. I love getting some organic spinach and tossing some cut up veggies, avocado, and chicken on top. You can top it with your favorite dressing or even try good ol fashioned olive oil and balsamic vinegar! This salad from Joyful Healthy Eats looks amazing too.
Super Easy Pad Thai

If there’s one thing I really enjoy cooking its Asian food. This Pad Thai recipe from Tastes Better from Scratch is seriously SO easy and so yummy. It takes me about 30 minutes from start to finish! It’s so easy to toss in lots of colorful veggies into this dish and you don’t have to worry about any weird preservatives that may be in your takeout. Oh, and you’ll save money making it at home too!
Breakfast
Green Smoothie

Green smoothies are so easy and quick to make and very customizable. You can throw spinach into almost any smoothie and hardly know it’s there! Here’s my favorite recipe:
- 1 c unsweetened coconut milk or almond milk
- 1 heaping handful of spinach (organic if possible)
- ½ c of berries ( I like raspberries & blackberries)
- 1 scoop collagen or protein powder to add sweetness and protein
- 1 tbsp ground flax or chia seeds OR ¼ avocado
Blend everything well and enjoy!
Overnight Oats
If you enjoy oatmeal, but don’t have time to make it fresh in the morning, try overnight oats! Simply add some whole oats, liquid of your choice, and toppings of your choice in a container or jar and let it sit overnight. It will be ready to go in the morning!
Chocolate Muffins

If you don’t already know, I LOVE making homemade healthy muffins. These chocolate muffins remind me of the giant chocolate Costco muffins, but much healthier.
Here are some of my other favorite muffin recipes:
Avo Toast with Egg

To be honest, I’m not a huge fan of savory food in the morning, but if you love toast and avocado and prefer your breakfast to be savory, try this avocado and egg toast recipe from Simple Green Moms. It’s packed with protein and healthy fats to keep you full until lunch!
Hungry Yet?
If you’re a busy woman (which heck, we all are!) that doesn’t mean you have to give up on eating healthy. Maybe it just means shifting your priorities a little bit or planning ahead. I believe in you!
