Healthy Peanut Butter Muffins

Calling all peanut butter fans! You guys are gong to LOVE these healthy peanut butter muffins. I tried it out over the weekend and it was bomb.

The best part?

It’s only 7 ingredients and has ZERO flour. It’s 100% flourless.

Not that I’m against flour or anything. Whole wheat and oat flour are some healthy flours I use pretty often in my baking. But when I found out you can make muffins with no flour I had to try it out.

These muffins are loaded with peanut butter and sweetened naturally with applesauce and raw honey. If you didn’t know, white processed sugar is basically the kiss of death, so I like to avoid baking with it as much as possible.

You can use a banana in place of the applesauce if you’d rather have a peanut butter banana taste and you can omit the chocolate chips too. (But why you would EVER want to do that, I won’t know.)

Next time I might try adding protein powder to them to up the protein content, but they are pretty perfect just how they are!  They are moist, filling, and super peanut buttery! 

These make a yummy snack, breakfast, or dessert! I had two for breakfast today and they kept me full for 3 hours!

Here’s the recipe: 

  • 1 small container (4 oz)  of no sugar added applesauce
  • 1/2 c peanut butter
  • 3 tbsp raw honey
  • 1 egg
  • 1/2 tsp baking soda
  • 2 tsp vanilla
  • 1/3 c chocolate chips

Mix all the ingredients together well, then stir in chocolate chips. Bake at 375 degrees for 12-15 minutes or until the tops are golden and a toothpick comes out clean. Makes 6 muffins.
