Easy & Delicious Mini Avocado Blender Muffins

These mini avocado blender muffins are probably the best thing I’ve made all year. And if you love my banana chocolate chip muffins or my mood-boosting avocado brownies, then you’ll LOVE these mini avocado blender muffins too!

These muffins take less than 30 minutes to make and require minimal clean up. All you need is a blender (I used a Blendtec with the smaller jar) or a food processor.

Made with minimally processed ingredients, healthy fats, and some protein, you can enjoy these yummy avocado blender muffins anytime!

And don’t let the avocado throw you off. I promise you can’t taste it but it adds a delicious richness and texture.

Easy Mini Avocado Blender Muffins

Ingredients:

  • 1/2 c almond flour
  • 1/2 c chocolate plant based protein powder
  • 1/2 avocado
  • 2 tbsp coconut oil
  • 1 egg
  • 1 tbsp water
  • 1/4 c pure maple syrup
  • 1/2 tsp vanilla
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1/4 c chocolate chips

Directions:

Blend the avocado, egg, maple syrup, coconut oil, water, and vanilla until smooth. Add the protein powder, almond flour, baking soda, powder, and salt and blend well. Fold in chocolate chips.

Grease a mini muffin pan and add your mixture, careful to not add too much. Bake at 350 degrees for 15-20 min or until a toothpick comes clean. Makes about 12 mini muffins.

    Made these for the first time today and they turned out great! I doubled the recipe because I had a whole ripe avocado to use up. Also, a few tbsp of water was not even close to enough liquid. I continued to add water and blend until I reached the right batter consistency. I made full sized muffins instead of mini in my silicone cupcake tray. They popped right out, no spray, oil, or paper liners needed!
